Sassy Spinach!

For each serving you will need:

1 Cup of Spinach
1 Tablespoon of Orange Juice
1 Tablespoon of Rice Vinegar
1 Tablespoon of Ground Ginger
2 Tablespoons of Chopped Nuts

Mix OJ, vinegar, and ginger together.
Lightly coat a pan with nonstick olive oil spray
Saute' spinach and mixture
Add nuts and warm through.

*The sauce works well for stir fry as well, but I like it best with the spinach.
