1 cup all purpose flour
2 tablespoons sugar
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinamon
1 egg
1/4 cup of milk
4 cups unsweetened peach slices
2/3 cup sugar
1 tablespoon cornstarch
1/4 cup water
Preheat over to 400 degrees.
For filling: combine 2/3 c sugar, 1 tablespoon cornstarch. Add 1/4 c water. Stir in 4 cups peaches. Cook and stir until thickened and bubbly.
For topping, in a medium bowl stir together flour, 2 tablespoons sugar, baking powder, and cinnamon. Cut in butter til mixture resembles course crumbs. Set aside.
In a small bowl, stir together the egg and milk. Add to flour mixture, stirring just to moisten.
Transfer filling to a 2 quart baking dish. Using a spoon, immediately drop topping into small mounds on top of the filling.
Bake at 400 for 20 to 25 mins or until toothpick comes out clean.
