2 c chopped fresh broccoli or veg
1 T butter or margarine
1/2 c chopped onion (use a teaspoon of onion powder if needed)
1/2 c chopped bell pepper (optional)
1 c shredded cheese (cheddar, swiss or Jack)
1 1/2 c milk
3/4 c flour sifted with 1/2 t baking powder
3 eggs
salt and pepper to taste
Preheat oven to 400.
Steam broccoli until tender.
In a skillet, saute onion and pepper in butter until cooked. Mix vegetables in a greased 10 in pie plate or small casserole dish with the cheese.
In a bowl, beat remaining ingredients until smooth and pout over the vegetables. Bake 35-40 minutes until brown.
Serve hot or at room temperature.
